English: "Simbo posto" or "Simba Posta" (pronounced as /simbɵ postɵ/) is a cooked food from Odisha. To make this dish, flat beans (simbo or simba, ସିମ୍ବ in Odia) are sautéed with nigella (କଳା ଜିରା - kola jira or kala jira in Odia) and then cooked slowly in poppy seed paste (posto bota/ପୋସ୍ତ ବଟା in Odia).
The other variations are "Alu posto" or "Alu posta" (same preparation with potato instead of flat beans), and Johni posto or Janhi posta by replacing flat beans with luffa (jonhi/ଜହ୍ନି in Odia) in the same preparation.
